Oat Banana Pancakes

Recipe: (makes 8 pancakes)

🍌 1 large ripe banana
πŸ₯› 1 cup almond milk or any 0% fat milk
πŸ₯£ 2 cups rolled oats
πŸ₯„ 1 teaspoon pure vanilla extract
πŸ₯„ 1 teaspoon baking powder
πŸ₯„ 1 teaspoon ground cinnamon
πŸ₯„ 1/8 teaspoon salt (dash of salt)

Put all the ingredients together and mix them in a blender. Spray a pan with oil and add a portion of the mixture until gold brown😍 For serving, you can add banana or some fresh wild berries πŸ˜‹ Calories per pancake: approx. 100 calories.

Chestnut Chia seeds Pudding

🌰 1 cup peeled and cooked chestnuts

πŸ₯„ 8 tablespoons chia seeds

1 tsp cinnamon
1 tsp vanilla

Nutritious and Delicious: Lentil potato stew

πŸ₯„1 teaspoon dried rosemary
πŸ₯„1 teaspoon dried thyme
πŸ₯„1/4 teaspoon cumin
πŸ₯„1/4 teaspoon paprika
πŸ₯„1 tablespoon tomato paste

3 cloves garlic, minced
1 medium onion, chopped
πŸ₯” 2 large potatoes, cut in cubes

1 cup dried lentils
2 cups chopped kale
2 cubes low sodium vegetable bouillon
Heat olive oil, and stir garlic and onion for 1 min
Add carrots, potatoes, rosemary, thyme, cumin, and paprika and stir for 4 mins
Pour water, add tomato paste, bouillon cubes and lentils
Lower heat after boiling and partially close the lid of the casserole
Cook for 25 mins and stir occasionally
Add kale and cook for about 5-10 mins

500 g frozen whole strawberries
ΒΎ cup low fat yogurt
3 tbsp honey
2 tbsp fresh lemon juice

Blend until smooth, then place it in an air tight container and put in freezer for 1-2 hours.

Add fresh basil leaves when serving!
